COOKING CLASS: Ms. Shana Ward brought eight students (the Fifth – Seventh grade class) along with her assistants from West Tennessee School for the Deaf to JCIL on Thursday, February 19 for JCIL’s 5th cooking class.
JCIL’s interpreting staff, who divided the kids up into three groups, taught the class. The first group prepared the entrée, Pizza Meatloaf, under the supervision of Michele. The second group prepared Cheese & Herb Cibata Bread and Macaroni & Cheese with the assistance of Amy, and the third group prepared dessert, a yummy Oreo Pizza, guided by Lisa. As they finished preparing their part of the meal, each group cleaned their area then helped with the final preparations for lunch by setting tables and fixing drinks. After lunch everyone participated in clean up the some of the students put on a dance show for us. We had a wonderful time and look forward to having them come again.
Pizza Meatloaf Ingredients:
1½ lbs. ground beef
½ lb. Italian sausage
2 large eggs
1 (14oz) jar pizza sauce, divided
½ c. grated Parmesan cheese
1½ c. mozzarella or pizza cheese, divided
½ c. diced onions
½ c. diced bell peppers
Additional optional ingredients:
2 lbs. ground beef, omit Italian sausage
3 oz. pepperoni, chopped
1 small can chopped black olives
1 small can sliced mushrooms

Preheat oven to 375º. Combine all ingredients using ½ cup each of the mozzarella cheese and pizza sauce, reserving the rest for the topping. In a 13x9 baking dish, shape meat mixture in 9x5 loaf. Bake for 45 minutes. Top with remaining pizza sauce and bake an additional 15 to 20 minutes. Top with remaining shredded cheese and bake an additional 10 minutes or until the cheese is melted.

OREO® Pizza 1 pkg. (19.5 oz.) brownie mix
14 OREO Cookies, chopped (about 1-1/2 cups)
1 cup JET-PUFFED Miniature Marshmallows
1/3 cup chopped PLANTERS Walnuts
1/3 cup candy-coated chocolate pieces or peanut butter candies
PREPARE brownie batter as directed on package; stir in chopped cookies. Spread into greased 14-inch pizza pan. Bake at 350°F for 18 to 20 minutes or until done.
SPRINKLE marshmallows over top of hot brownie; bake an additional 3 to 5 minutes or until marshmallows are lightly browned.
SPRINKLE with walnuts and candies, pressing lightly into softened marshmallow. Cool slightly on wire rack. Cut into 16 slices; serve warm or cooled.
